Ever wondered what it takes to survive as a chef inside one of Melbourne’s top restaurants? As a chef, I can tell you. They chew you up and then they spit you out.
Let me explain. First, expect to work a minimum 60 hours a week and as much as 80-90 hours a week. But you’ll only get paid for about 40 hours a week. That’s a whole lot of unpaid overtime.
Hospo Voice, my union, calculated I had about $25,000 a year stolen from me. Probably more.
But the financial impact is really just the side dish.
